Its very stony vineyard, composed of clay, silt and limestone, stretches at the foot of the foothills of the Alpilles massif from where the ruins of the castle can be seen to the south.
This is an ideal terroir for a Grand Vin.
The grape varieties for the Grand Vin Rosé - Syrah, Grenache, Mourvèdre, Cabernet Sauvignon and Counoise - ; for the Grand Vin Blanc - Rolle, Roussanne, Grenache blanc and Clairette -, express concentration, complexity and finesse. Their wines are matured in stainless steel tanks in the heart of the underground cathedral, on fine lees (rosés) or on the totality of the lees (whites) for six months with a stirring operation.
